The Traditional Balsamic Vinegar of Modena PDO is an aged vinegar produced through the acetic fermentation of only cooked grape juice (must) obtained from the grapes produced in the province of Modena. No other ingredients are allowed in the production of this very special dressing and there are only a little more than a hundred producers today, all located in the area around Modena.
Talking about Traditional Balsamic Vinegar of Modena is talking about passion, patience and hard work, as it takes at least 12 years for nature to work its magic and the vinegar to turn balsamic.

Starting from Bologna, we will visit production sites located in the countryside between Modena and Bologna. The tour will not take you visiting Modena
Departing from Bologna, we will wake up early and drive to Modena's hills on a private car or minivan.
Making Parmigiano Reggiano is a very early morning activity and we will reach the first stop, the cheese factory, to see the cheese-men lifting the fresh wheels of cheese and prepare them for the aging process; together we will witness first-hand the production of one of the world most famous and tasty cheeses.
After visiting the cheese factory, our journey through flavour will take us to an acetaia (Balsamic Vinegar house) where, surrounded by the beautiful view of vineyards and meadows, we will learn the secrets of producing the precious "black gold" of Modena.

Calling all the cheese and meat lovers around the world, this tour is for you!
We'll start with the king of cheeses from Emilia Romagna, PDO Parmigiano Reggiano, visiting a cheese factory and their huge aging room (a real "cheese bank") and tasting different types of Parmigiano Reggiano.
But we won't stop there as the area also boasts a huge number of high quality, pork meat products, some of them already produced as far back as 2000 years ago.
Throughout the centuries, techniques and tools have changed but the tradition stays.
The PDO Prosciuto di Modena is one of these delicacies, made only from the thigh of the heavy Large White breed of pig farmed and butchered in northern and central Italy only.
What's the difference between using "Italian" pigs vs foreign ones? You'll be able to see it with your own eyes when visiting the factory and tasting their many flavourful pork meat products.
Last but not the least, the third gem of the region: Traditional Balsamic Vinegar from Modena.
